I don’t usually have the Monday blues like a lot of people I know. At this point in my life I get to stay at home with my favorite people in the whole world.
This morning, however, I had total Monday blues. The hubby is coming off of two weeks of normal, home at 5:30pm or so, hours, and going back to ridiculously long hours. It is what it is, but it made this Monday a bit tougher.
Our solution (Lorelei and I brainstormed) was to make a cake, with SPRINKLES on the INSIDE. So we did.
We followed this recipe from, Annie’s Eats, that I found on Pinterest. The only changes I made was omitting the almond extract (we’re out of it), and I baked one 9″ round pan, and I didn’t grease the pan.
Lorelei loves baking. I love how much patience it teaches her. Waiting 22 minutes for the cake to come out of the oven, and then another 10 for it to cool. That is TOUGH stuff for a 3 year old, but she rocked it.
The cake turned out fabulous, and it was fun, and took away those Monday blues.
We did omit the frosting (as you probably can tell). It was amazingly delicious anyway. I think we’ll do a similar cake for my littlest ones first birthday (in 3 months, sniff sniff), but then, we’ll do the icing. Just have to find a recipe we all like.
Sorry, I was a Food Friday slacker this week. I was enjoying one last Friday when the hubby could come home at a reasonable hour. My half finished post was on homemade roasted chickpeas. This was another Pinterest pin, and it was one where I saw it, and literally got up and did it that moment. They were delicious. We ate them with a salad, on the floor, ‘picnic-style,’ per the three year olds request.
